چکیده

The authenticity of olive oil has been a significant long-term challenge. Extra virgin (EVOO) is the most desirable these products and commands high price, thus unscrupulous individuals often alter its quality by adulteration with lower grade oil. Most analytical methods employed for detection food require sample collection transportation to central laboratory analysis. We explore use portable conventional Raman spatially-offset spectroscopy (SORS) technologies as non-destructive approaches assess status EVOO quantitatively SORS directly through original container, which means that after analysis bottle intact would still be fit use. Three sets were generated, each different adulterant varying levels chemical similarity EVOO. These included mixed sunflower oil, pomace or refined Authentic samples stretched/diluted from 0% 100% adulterants measured using two handheld spectrometers (excitation at 785 1064 nm) (830 nm). PCA scores plots displayed clear trends could related level all three mixtures. Conventional (at 830 nm single spatial offset) conducted in vial mode resulted prediction errors test set data ranging 1.9–4.2% 6.5–10.7% 8.0–12.8% oil; limit (LOD) typically being 3–12% adulterant. Container produced very similar results: 1.4% sunflower, 4.9% pomace, 10.1% LODs 2–14%. It can concluded spectroscopy, including through-container SORS, potential rapid accurate method extra

Extra virgin olive oil and oleic acid

For many decades, researchers have investigated the relationships between health status and consumption of extra virgin olive oil. Extra virgin olive oil (and oleic acid) is considered important for the prevention of coronary heart disease. While the biomolecular aspects involving G protein need further research, oleic acid levels in platelets may be a discriminating factor, together with linol...

Effect of Fatty Acid Composition on Thermal Stability of Extra Virgin Olive Oil

Background: Fatty acids are the main compounds in edible oils. Oil thermal stability depends on the composition of fatty acids. So, this study was conducted to investigate the effect of fatty acid composition on the oxidative stability of extra virgin olive oil during heating process.  Methods: Totally, eight virgin olive oil samples, including five imported oils from market place of Ma...
